To make these St David’s Day celebration welshcakes you will need:
Ingredients (These quantities will make approximately 24 Welshcakes)

To make vegan welshcakes in place of butter use vegan spread or margarine and use oat milk instead of egg.
Wheat flour alternatives can be substituted in equal quantities e.g. gluten-free flour.
Equipment
Step 1: Sieve together self-raising flour and mixed spice into the bowl
Step 2: Add the Welsh butter, to the flour and using your fingertips rub these ingredients together until a light crumb is reached, then gently toss through the currants and sugar.
Step 3: Make a well in the centre of the mix and add the beaten egg, then using your fingers bring the ingredients together to form a pliable dough ball.
Step 4: Cover and place dough ball into the fridge for 30 minutes. Whilst the dough is chilling, pre heat the bakestone to a medium heat*. If you do not have a bakestone a thick bottomed frying pan will work too.
Step 5: Place the dough on a lightly floured work surface, gently roll out until approximately ½ centimetre thick, cut out 7cm diameter rounds and place on a tray.
Step 6: Grease the hot bakestone very lightly with vegetable oil. Place the welshcake rounds onto the bakestone for 2 minutes per side or until cooked all the way through, remove and place on a cooling rack, whilst hot dust with caster sugar.
